Good Morning Glories! Who used to say that? I can not remember where I first heard it, but it is 7:30 am and I have been up since 5:30 and I have already fixed lunch w/desert and am dressed and showered and ready to go. I have to say I am a happy camper today. I have been invited back to Fall Sewing days at Irvalee’s, which I mentioned in the Fall Pumpkin Decoration Post. I was holding my breath this morning since I have decided I might need to get a job, so I signed up to be a sub aid in the local school system. I got my first call last Thursday and had to decline since I was taking my brother-in-law to his Dr.’s appointment. I knew if they called this morning, I would have to accept. Well, it’s 7:30 and the phone hasn’t rang, so I am home free and will be sewing ALL day with some very fun ladies. Watch for some posts with my project in the near future. This soup, however, was made for my scrapbook group and it was a big hit as was the desert which I will post later in the week.

Now on to the serious stuff….
Crock Pot Chicken Tortilla Soup
1 can each of … (drain and rinse each)
corn
kidney beans
black beans
2 cans each of…
chicken broth
Ro-Tel tomatoes (I used mild)
1 package of taco mix
1 onion diced (I used some frozen left from another recipe)
1 1/2 to 2 cups of water
2 boneless skin-less chicken breast
items added later…
tortilla chips
shreeded cheedar cheese
sour cream
Now comes the fun part! Put a slow cooker crock pot liner in your crock pot. This is the hardest part…open all the cans! Yes that is just how easy this recipe is, opening the cans is the hardest thing you will do. Dump every thing except the chicken breasts into the crock pot. Give it a big stir. Place the uncooked chicken breasts on top of the mixture and make sure they are covered with liquid.
This picture was taken before I added the chicken breasts. Cook on low 8 to 9 hours or on high 6 to 7 hours. When ready to serve, you may have to take out the chicken breasts and shred them or they may just fall apart by theirselves. Put your tortilla chips in the bottom of the bowl and top with soup, cheese and some sour cream if you desire. You will not believe how something so simple tastes so good. The chicken is so moist. My hubby even liked it and he is very picky!

The Soup was a super hit at scrapbooking last weekend. We all enjoyed it and topping it with some shredded cheese you know it will be Awesome. And the dessert that you said you will post later is to die for………………. It was the bomb !!!!!!!!!!!!!!! Yes I ate 2 pieces. 🙂 Keep up the greta posts—lovin’ them !!! Kristine
