Fall is in the air and it seems like a good time to have something “pumpkin”. I saw a recipe similar to this on Pinterest and it reminded me of one of my favorite recipes my mom used to make. She called it chocolate delight. If you want to make this version, you need to hurry out to your local store and pick up some pumpkin spice Jello instant pudding. I say hurry out, because it is only in the stores for a short time in the fall. I found mine at Walmart. I took this to Fall Sewing Days last week and it was a big hit. You can make it with any flavor of instant pudding. My mom always “cut” the main flavor with vanilla, but I had some “white chocolate” in the pantry and it was delish!
Here is my original recipe that my mom gave me many years ago. You can tell from the picture it has been well used.
My version of Chocolate Delight just in time for fall.
You will need:
First layer
2 cups flour
1 cup of chopped nuts (I used walnuts this time or you can use pecans)
1 cup oleo softened ( I used butter)
mix and press in 9 x 13 cake pan and bake 15 mins at 375 degrees and then COOL
Second Layer
1 cup of powered sugar
1 8oz cream cheese softened
Cream these together and add 1/2 of a large tub of Cool Whip
Third layer
1 small box of white chocolate instant pudding
2 small boxes of pumpkin spice instant pudding
4 1/2 cups of milk
Mix as directed on package and spread over the 2nd layer
Now top with remaining Cool Whip. I sprinkled a little pumpkin pie spice just to dress it up!
In the Chocolate version my mom used 2 boxes of vanilla and one box of chocolate instant pudding. I hope your family enjoys this as much as ours. Don’t forget to pick up that Pumpkin Spice pudding as soon as possible.
