Looking back on my posts, I see it has been awhile since I have posted FOOD! After the New Year I know everyone is trying not to think of food and if you are like me, the more I try not to think about it the more I just want to eat!
I have seen several recipes for Broccoli Salad, but this one really hits the spot with me. It has everything I love in it. Well, ok, I am not that crazy about onions, so I never put in as much as is listed below. This is a favorite recipe at my Quilt Guild’s potluck. My friend Charlotte is responsible for my addiction to this salad. I now make if for most of our family functions.
Broccoli Salad
1 bunch of broccoli, chopped
1 med onion, chopped fine (I don’t use that much)
1 cup of shredded cheddar cheese
1/2 lb bacon, fried and crumbled
1/2 cup of raisins
2 hard boiled eggs, chopped (seems to be a lot of chopping going on)
3/4 cup of mayonnaise
1 Tlb vinegar
1/4 cup of sugar
When you put this in a bowl, it looks kinda gross. The vinegar soon breaks down the mayonnaise and it is sooooo good!
The chopped broccoli is in the bottom of the bowl and then you just add the other ingredients.
Now pour on the dressing and Chill. It is the perfect combo of sweet and salty…and vegetables are involved. What more could you ask for?
